Khachapuri is a very tasty and easy-to-prepare Georgian dish. It is prepared from kefir dough with the addition of cheese filling. The dough turns out to be tender and airy, and the cheese filling, consisting of different types of cheeses, complements it with its creamy salty taste.

Pour kefir into a deep bowl, add one egg, salt, soda and sugar. Knead everything well until smooth.

We sift the flour into a separate bowl, then in several stages we introduce the flour into the kefir-egg mass. We knead the ingredients well so that there are no lumps.

We form the resulting dough into a ball and wrap it tightly with cling film. Put the dough in the refrigerator for 50-60 minutes.

The dough needs to lie down a little. During this time, we will prepare the filling: rub the semi-hard cheese and suluguni on a coarse grater.

We take the dough out of the refrigerator, divide it into four equal parts. Sprinkle flour on the place for rolling out the dough and roll out each piece of dough into a round cake, no more than 5 mm thick.

Put the cheese in the center of each flatbread, then collect in the center of the edge of the flatbread and pinch.

Turn the cakes over with the pinched seam down and roll them out again.

We spread the cakes on a baking sheet greased with vegetable oil, prick the cakes in the center with a fork so that the dough does not swell, and grease with a beaten egg. We put the khachapuri to bake in the oven at 200 degrees for 30 minutes.
