For connoisseurs of homemade soups, I would like to recommend with great pleasure a recipe for a great classic kharcho made from beef with rice and tomato paste. Prepare such a soup for a family dinner and you will be left with a pleasant experience.

Wash the beef, remove the veins. To cook the meat faster, cut into medium-sized pieces. Place in a deep saucepan. Fill with cold water. Put the saucepan on fire and bring to a boil, periodically removing the resulting foam with a slotted spoon. Then reduce the heat and cook the meat until tender.

Peel the onions and garlic, rinse. Cut the onion into small cubes. Chop the garlic with a sharp knife, grate on a fine grater or pass through a press.

Heat the pan well over high heat, add a little vegetable oil, put the chopped onions and fry until softened over low heat, stirring occasionally.

Then add spicy adjika.

Then add tomato paste and pour in a small amount of meat broth. Stir and cook over low heat for a few minutes.

Then add your favorite spices. I added suneli hops, ground coriander, black pepper and salt. Mix well.

Rinse the required amount of rice thoroughly under running water several times, and then put in the meat broth, salt, bring to a boil, and then reduce the heat and cook for about 20 minutes. Gently transfer the prepared frying to a saucepan. Stir the kharcho thoroughly.

Then turn off the heat and let the dish infuse for 15 minutes. Serve the classic fragrant beef kharcho with tomato paste and rice in portions.
