It is unusual for our person to eat soup without potatoes, and the hostess must cook soups according to the taste preferences of her loved ones, so we prepare kharcho according to the Russian version - with potatoes. In the recipe, it is proposed to replace the traditional Georgian kharcho sauce with tomato paste with the addition of tkemali sauce, because you do not always have all the ingredients for the classic Georgian kharcho at hand. Such a soup is prepared quickly.

Rinse the beef with cold water and cut into medium cubes. Place them in a soup pot, pour 2 liters of water and cook. After removing the foam from the surface, pour a teaspoon of salt into the boiled broth, put bay leaves and cook the beef over medium heat for half an hour.

Peel the potatoes and onion while the meat is cooking. Then cut the potatoes into cubes, finely chop the onion, chop the washed parsley and chop the peeled chives with a knife.

Transfer the cooked beef with a slotted spoon from the broth to a plate. Strain the broth and pour into the same saucepan. Then bring the broth to a boil and transfer the potato cubes and washed rice into it. Boil everything until the potatoes are fully cooked.

While the potatoes and rice are cooking, heat the oil in a skillet. Then fry the chopped onion in oil. Then transfer the pieces of boiled beef to the fried onions and fry the meat and onions for 5 minutes.

Put the fried beef in a saucepan to the already cooked rice and potatoes, add the tomato paste and tkemali sauce, stir and cook the kharcho for another 5 minutes. Then turn off the fire. Put chopped garlic with parsley in the soup, add hops-suneli, stir and leave the kharcho under a closed lid for 10-15 minutes to infuse.
