It is with great pleasure that I want to share an extraordinary recipe for pork kharcho in Georgian style. The cooking process is pretty simple. Especially tasty kharcho turns out in the cold season, the soup perfectly warms and nourishes.

Wash the pork, put in a deep saucepan. Fill with cold water. Peel the onions and add them to the meat. Peel the carrots, cut a piece, add to the pan.

Put the saucepan on fire and bring to a boil, periodically removing the resulting foam with a slotted spoon. Then reduce heat and cook for 40-50 minutes.

Chop the remaining onions and carrots with a sharp knife. Heat the pan well over high heat, add a little vegetable oil, put the chopped vegetables and fry until softened, stirring occasionally.

Add tomato paste and a ladle of meat broth to the fried vegetables. Stir and cook over low heat for a couple of minutes.

Wash the tomatoes well, peel the stalks and peels, after sprinkling with boiling water. Chop finely and place in a skillet.

Stir and cook over low heat until thickened.

Rinse the required amount of rice thoroughly under running water several times. When the pork is completely cooked, carefully remove it from the boiling broth, cool slightly and separate from the bones. Then cut into medium sized pieces.

Peel the garlic, rinse in water, and then chop with a sharp knife or pass through a press. Sort the walnuts thoroughly so that the shell does not get in, chop until smooth with a rolling pin. You can also use a coffee grinder or blender.

Place the washed rice, chopped pork, cooked fry, chopped garlic and walnuts in a pot of stock. Then add your favorite spices. I added suneli hops, black pepper and salt. Stir well, bring to a boil, reduce heat and simmer for about 20 minutes. Remove from heat and let it sit for 15 minutes.

Rinse the greens in cool water, shake off excess moisture and chop with a sharp knife. It is best to use cilantro or parsley. Serve Georgian-style pork kharcho on the table in portions, garnish with chopped herbs.
