Wash the pork well, then cut into medium sized pieces of the same size, place in a deep saucepan. Fill with cold water. Salt. Put the saucepan on the fire and bring to a boil, periodically removing the resulting foam with a slotted spoon. Then reduce heat and simmer for 30-40 minutes.
