Pork kharcho with barley

Measure out the required amount of pearl barley, sort it out, rinse it several times, then fill it with pre-prepared boiling water and leave it for a while so that the pearl barley is well steamed. This is done in order to shorten the cooking time.

Wash the pork, cut into small pieces, put in a deep saucepan. Fill with cold water. Put the saucepan on fire and bring to a boil, periodically skimming off the foam with a slotted spoon. Then reduce the heat and cook the meat for 30-40 minutes.

Peel the onions and garlic, chop finely. Heat a frying pan over medium heat, add vegetable oil, add chopped onions and garlic, fry the vegetables until softened, stirring occasionally. Add tomato paste to the fried vegetables.
