Classic pork kharcho with rice and potatoes

Georgian soup kharcho has long been a favorite dish of our housewives. It is so thick and rich that it can feed the whole family. It is made in meat broth; lean pork is ideal.

Wash the pork, cut into pieces and cook. When the broth boils, remove the foam with a slotted spoon, cook for 50-60 minutes.

Peel and chop the onions, potatoes and carrots. Heat a frying pan, add a little vegetable oil and fry the onions and carrots until golden brown. After 3-5 minutes, add tomato paste, simmer until excess moisture evaporates.

When the meat is almost done, add the rice and potatoes. Cook for 15 minutes, then add the vegetable dressing, dry spices, and salt to taste.

Finely chop the garlic and herbs. Remove the pot with kharcho from the heat. Add garlic and herbs to soup, cover and leave for 10-15 minutes.
