Wash the pork, put in a saucepan. Fill with cold water. Salt. Put the saucepan on fire and bring to a boil, periodically removing the resulting foam with a slotted spoon. Reduce heat and simmer for 40-50 minutes. Remove the cooked pork from the broth, cool slightly, separate from the bones and cut into medium pieces.
