Khashlama in Armenian on beer

There are a lot of khashlama recipes; it is cooked over a fire and at home. It is a delicious, warming and nutritious dish that is somewhere between soup and vegetable stew. According to your preferences, you can cook it with different types of meat: lamb, pork, beef or chicken.

Wash the meat, cut into small pieces, salt well and leave to marinate for 30-40 minutes. During this time, prepare the vegetables: wash, peel and cut them. Put the meat in a heated cauldron, fry over high heat with vegetable oil for 3-5 minutes. Then add the onion, cut into half rings.

Remove the cauldron from heat, add the carrots, cut them into wide circles.

Put the peppers skin side up so that the juice goes into the meat.

Then lay out the potatoes, cut into large wedges.

Put tomato slices and herbs on top of the potatoes. Pour the contents of the cauldron with beer, close the lid and put on fire.

Bring the contents over high heat to a boil, then simmer the khashlama over low heat for 1-1.5 hours. Keep the lid closed all the time and do not stir the food. When khashlama is ready, stir it and serve.
