Khashlama with eggplant

The national Armenian dish, khashlama, is made from meat and vegetables. The ingredients are coarsely chopped and simmered over low heat. In addition to potatoes, onions and carrots, add eggplants to khashlama, they will perfectly complement the taste of meat.

Wash the meat, dry and cut into cubes. Put the meat in a saucepan, salt and season it.

Peel and chop the onion.

Put the onion on top of the meat. Peel the carrots, wash and cut into semicircles, put them on the onions.

Peel and cut the potatoes into thin slices.

Peel the garlic, chop, put it together with the potatoes in a saucepan.

Peel the eggplants and bell peppers, chop them. Arrange the vegetables in layers.

Place the chopped tomatoes in the last layer.

Sprinkle the dish with salt and spices to taste, set to stew. First, keep the khashlama over medium heat for 5-10 minutes, then reduce it and simmer until cooked for 1.5-2 hours. Serve the finished dish hot.
