For those who dislike industrial yeast for any reason, a sourdough product is an ideal alternative to homemade bread. In this recipe, we suggest using rye sourdough, and take both rye and wheat flour in almost equal proportions. Such bread will have a ruddy, dense and airy crust, a porous moist crumb and a light delicate sourness. The recipe is for a one kilogram loaf.

It is recommended to soak sunflower seeds in advance, at least a couple of hours before the start of kneading the dough. Their texture will become softer and will be more successfully combined with bread crumb. We heat the water in the specified amount to a warm state, pour it into the bowl of the bread machine. Then add rye sourdough, soaked seeds and salt. Pour both types of flour on top of the liquids: wheat and rye.

We place the bowl with the ingredients in the bread maker. Close the lid and select the "French bun" program - in this mode, bread always comes out with a particularly crispy and airy crust. Press the weight - 1 kilogram. Then we press the start button - the device will start kneading according to this program, then proofing, and then baking bread.

When the program time has elapsed, the bread maker will beep and you can already take out the bowl with the finished bread.

Turn the bowl over and remove the loaf. From the bottom of the bread, carefully pull out the hooks for kneading the dough.
