Wash the pork knuckle, chicken and beef, put in a saucepan, and cover with water so that it covers the meat. Add bay leaves, salt and black peppercorns. Put on fire and bring to a boil, remove foam, reduce heat and simmer under a lid for 6 hours. Cool the cooked meat.

Separate the cooled meat from the bones and disassemble it into pieces with your hands.

Peel the onions and garlic.

Pass the prepared meat, onions and garlic through a meat grinder or chop with a blender.

In a deep container, combine the chopped meat and the broth previously strained through a fine sieve. Stir until smooth.

Prepare containers in which you will pour the jellied meat. I used silicone muffin cups. Cool the jellied meat completely at room temperature, and then cover with cling film and place in the refrigerator to set for 8 hours, but preferably overnight.
