On a hot summer day, a beet tops chiller will be an ideal option not only to quench your hunger, but also to quench your thirst. This light summer dish does not require any special culinary skills or experience to prepare, and most importantly, time. In literally an hour you can cope with the preparation and please your loved ones with cold beetroot soup.

First you need to boil beets, potatoes and eggs. It is better to boil potatoes in their skins. Before cooking, separate the beets from the tops. We wash and cut the tops.

We wash the cucumber and chop it into strips. If desired, the cucumber can be grated.

Cut the boiled beets into medium-sized cubes. We send it to a saucepan with boiling water, put the chopped tops, sugar, salt, vinegar there. After 20 minutes, remove the mass from the heat and let it cool.
