Kholodnik is a delicious summer soup of East Slavic cuisine that is still popular these days. Its name speaks for itself. And sometimes it is simply not replaceable when it is hot. This is a very satisfying, mouth-watering and refreshing dish.

First, boil the beets. To make the beets cook faster, you can cut them into halves and send them to the already boiling water.
