Refreshing beetroot cooler on mineral water will quench both thirst and hunger at the same time on a hot summer day. Add boiled young potatoes and fresh dill to it, it will be more satisfying and tasty. True, the vegetables will need to be cooked in advance.

On the eve, cook young beets until tender. Cool, peel off. Rub on a coarse grater.

Hard-boiled eggs, cool quickly, peel and finely chop with a knife.

Wash and dry the greens, also chop them finely.

Remove the peel from the cucumbers, cut into small cubes. Mix all the ingredients in a saucepan, add salt and pepper and stir.
