Boil the beets, peel and grate, then fill it with water, vinegar and add four tablespoons of sugar there. We mix everything and leave for a day so that the beetroot sourdough is infused. After that, the leaven must be filtered.

We wash the beet tops, cut and boil in water with the addition of a teaspoon of vinegar. After that we cool the tops.

Shake the sour milk thoroughly and mix in a separate bowl with boiled tops and beetroot sourdough. Add chopped radish, cucumbers cut into small cubes, chopped dill to the resulting mass. Season everything with salt, sugar, spices as desired.
