Cold beetroot on the water

On a hot summer day, a cooler with beets on the water will be a good alternative to okroshka. You can cook a lot of this soup at once and store it in the refrigerator. If you boil beets and eggs in advance and cool the boiled water, then the fridge can be prepared very quickly.

First, prepare all the food you need to have everything close at hand.

Peel the boiled beets and grind them into a coarse grater.

Transfer the grated beets to cooled boiled water and add fresh lemon juice to it, squeezing it directly into the saucepan. The juice can be replaced with citric acid. Pour the required amount of salt and sugar into the fridge. Mix everything and taste. Then put the soup in the refrigerator for 1 hour.

Rinse the cucumbers and herbs with cold water. Chop the cucumbers into small pieces of any shape. Dry the greens with a napkin and chop finely. Sprinkle the onion with salt and rub a little with a spoon. Peel the eggs and cut into halves.
