Kholodnik is a variant of cold summer soup that constantly competes with various okroshka. A summer dish turns out to be fragrant and perfectly nourishes on a hot day. If you are planning to cook a cold pot, boil the beets in the evening, this will significantly save your time.

Wash the beets thoroughly, put in a saucepan with a thick bottom, cover with cold water, bring to a boil. Reduce heat and cover. Cook for about an hour. The cooking time for beets depends on their size and quantity. Cool and peel the boiled beets, then grate them on a coarse grater and put them in a container in which you will cook a fridge.

Boil chicken eggs. Pour the required amount of kefir and drinking water into the container for the beets. The fat content of kefir is not important, take the one that you have in stock. Peel the garlic. Chop with a knife or fine grater or pass through a press. Add to soup, salt and pepper.

Wash and dry cucumbers thoroughly, cut into small cubes, peel them first, if necessary. Place with the rest of the ingredients.

Choose greens according to your own preferences. I always take the standard set - green onions, parsley and dill. Rinse it thoroughly under running water and dry it, chop finely and send it to a saucepan. Stir the fridge well, cover and put in the refrigerator to infuse for about 30 minutes.

Peel the boiled chicken eggs and cut them lengthwise into 2 or 4 pieces. Pour the chilled beetroot into bowls, garnish with half or a quarter of a chicken egg. Serve with sour cream. The fridge is quick and easy to prepare, provided you have cooked beets on hand.
