Cold borsch with meat

I recommend making a delicious cold borscht with meat. This dish is somewhat similar to beetroot or chilli. It turns out fragrant and satisfying. A good option for a summer lunch.

Rinse the chicken thigh well, put in a saucepan, pour a little cold water, bring to a boil, periodically skim the resulting foam. Simmer, covered, for 20 minutes. Wash the beets thoroughly, peel with a vegetable peeler and cut into thin strips.

Place a small amount of cold water in a saucepan, place over medium heat and add the chopped beets. Bring to a boil. Wash the lemon thoroughly, cut into thin slices and squeeze out the lemon juice so that the beets do not lose their color. Cook the beets for about 15-20 minutes over low heat, covered.

Wash and dry cucumbers and radishes thoroughly. Cut the radish into small cubes.

Cut the cucumbers in the same way as the radishes.

Remove the pot with beets from heat and cool completely.

Place in a saucepan with the rest of the ingredients. Add cooled chicken stock. Season with salt and pepper. Mix thoroughly.
