Cold borsch with ham

Cold borscht is a great alternative to okroshka. This first course recipe is perfect for a hot lunch, satisfying hunger and refreshing. At the same time, it is quite fast and easy to prepare.

All vegetables must be washed. Boil the beets and potatoes in their uniforms until tender, cool, peel, grate the beets on a coarse grater, cut the potatoes into small cubes. Boil eggs in a steep, cool, remove the shell, grate.

Cut the ham into small cubes. Cut the cucumbers into cubes, chop the herbs with a knife. Combine potatoes, ham, cucumbers, herbs and eggs, stir.

Add beets to the ingredients, pour over the juice of half a lemon, add chilled boiled water, season and salt to taste, stir. Refrigerate the borscht for at least three hours.
