Eggplant caviar is not just a delicious appetizer that goes well with many dishes, but also a real storehouse of vitamins. And all this thanks to the main ingredient - eggplant, which has a beneficial effect on the digestive system. If you wish, you can adjust the spiciness of the appetizer: lovers of spicy food can add more pepper to the eggplant caviar.

Let's start preparing eggplants. First, they must be washed, dried and cut into large cubes. Then put the chopped eggplant in a deep bowl, salt and leave for half an hour so that the eggplants let the juice out. Bitterness will come out along with the juice. After half an hour, put the eggplants in a colander, which will help get rid of the bitter juice.

We wash and peel the carrots, then grate them. Cut the onion peeled from the husk into cubes.

We also wash the bell pepper, remove the seeds and the stalk from it, and then cut it into cubes.

We heat a frying pan, drizzled with vegetable oil, and fry the carrots, onions and bell peppers in it. We fry the vegetables for fifteen minutes, remembering to stir them occasionally. After the vegetables are ready, put them in a separate saucepan.

Fry the eggplants separately in a skillet.

We send the fried eggplants to the pan with the rest of the vegetables.

We wash the tomatoes, pour boiling water over them for fifteen minutes, then let them cool a little and remove the skin from them. After that, cut the tomatoes into small cubes, after removing the stalk from each fruit. Combine chopped tomatoes with vegetable mass in a saucepan.

We put the saucepan with vegetables on the fire and constantly stir its contents. Cook until tender. A few minutes before removing the pan from the heat, season its contents with chopped garlic, sugar, salt, vinegar. Mix everything well.
