Eggplant caviar is a favorite snack of many! Despite the many options for its preparation, special attention should be paid to recipes according to which eggplant caviar turns out to be incredibly tasty. Just lick your fingers! This recipe is no exception. Try it, experiment!

Peel the onions and carrots. Next, grind the peeled vegetables in an arbitrary way, because in the future, the vegetable mass will be interrupted by a blender.

Peel and cut the eggplants into small cubes. We send the eggplants to a deep saucepan.

Next, the onions and carrots must be fried separately. Pour vegetable oil into each pan (125 ml each). Cook vegetables over medium heat for 10 minutes. The carrots should be soft and the onions clear. When ready, transfer the carrots to the eggplant pan.

Add tomato paste and half of the required amount of water to the onions, mix everything and simmer for a couple of minutes.

The next step is to transfer the onion fried in tomato paste to a saucepan with other ingredients, pour in the remaining volume of water and put on fire. Simmer the vegetable mass for about 60-80 minutes, stirring occasionally. 15 minutes before cooking, add granulated sugar, salt, ground pepper and paprika to the vegetables. Do not forget to add vinegar. Mix everything and simmer until tender.

After that, the finished vegetables must be interrupted with an immersion blender until smooth. We put almost finished eggplant caviar on the fire, bring to a boil and turn off the gas.

Distribute hot vegetable mass into prepared jars and roll up.
