Eggplant caviar for the winter with vinegar

Eggplant caviar is an original and savory snack that you can pamper yourself and your family with all year round. Caviar can complement hot dishes, and is also used for sandwiches and other snacks.

We wash the eggplants and send them to bake in the oven for 15 minutes at a temperature of 200 degrees. You can do this in the microwave too - 10 minutes at full power.

We do the same with bell pepper. Only they will need a little less time. In the oven for 7-10 minutes, in the microwave - 5.

Cool the eggplants and peel them. Chop the peppers.

Combine prepared eggplants and peppers in a blender with peeled garlic cloves. Grind to a state of gruel.

Scald the tomatoes, remove the peel from them, chop the rest.

Peel and chop the onions, pass the carrots through a grater. In a frying pan in vegetable oil, fry the onions, carrots and tomatoes over low heat for 15 minutes.
