Zucchini caviar on a grater

According to the classic recipe, grated squash caviar can replace industrially prepared counterparts from the store. It is fragrant, thick, completely natural and sweetish in taste.

Wash, dry and peel the vegetables.

Grate all vegetables and put in a deep saucepan. Simmer over low heat for half an hour, stirring occasionally.

For dressing, mix tomato paste with hot water and mix well.

Add the dressing to the saucepan, add the red bell pepper and add 2 tbsp. vegetable oil.

Simmer for another 20 minutes. over low heat with constant stirring.

Wash the cans in advance and sterilize in the oven. Spread the caviar in sterile jars and roll up with clean lids. Cool under a blanket, turning the jars of caviar upside down, and store in a cool place.
