Carrot caviar through a meat grinder for the winter

Carrots are a fairly popular vegetable that can be found in stores or in the market all year round. You can make many different healthy salads and winter preparations from carrots. Today I want to offer an interesting and simple recipe for carrot caviar, cooked using a meat grinder.

First, wash the carrots thoroughly and then peel them with a vegetable peeler. Cut the peeled carrots into small pieces. Peel the garlic, and then rinse in cold running water.

Pass the prepared carrots through a meat grinder. Peel the onions, rinse in cold running water, then cut into several pieces. Pass through a meat grinder along with the peeled garlic.

Wash the tomatoes thoroughly, then dry and cut into small pieces, after removing the stalk. Put the prepared tomatoes in a small saucepan, and pour about a glass of cold water. Place the saucepan over medium heat and bring to a boil. Then reduce heat and cook the tomatoes for about 5-7 minutes. Then remove from heat and rub the tomatoes through a fine sieve.

You will get a liquid tomato mass.

Put a heavy-bottomed saucepan on fire and heat well. Pour in a small amount of vegetable oil.

Gently place chopped carrots with onions and garlic in a preheated saucepan. Pour in the mashed tomatoes. And mix well.

Cover the saucepan and simmer the vegetables for about 30 minutes, stirring occasionally.

Then add the required amount of salt and black pepper to the caviar.

Close the lid and simmer the vegetable mass for about another 30 minutes.

About 5 minutes before cooking, pour in the required amount of vinegar and add granulated sugar, mix thoroughly. Prepare the jars, wash them thoroughly in warm water and baking soda, and then sterilize in the microwave, oven, or water bath.

Place the cooked carrot caviar in sterile jars. Pour boiling water over the lids or boil.

Tight the jars of caviar with sterile lids, then turn the jars upside down and wrap them in a warm blanket. Then leave in this position until completely cooled for about a day, after which the cans are turned over and transferred to a cool, dark place for long-term storage.
