Odessa style baked eggplant caviar for the winter

Eggplant caviar is aromatic and spicy. And also useful! Since the appetizer is prepared with minimal heat treatment. Only peppers and eggplants are baked. The blank can be used for sandwiches and as a sauce.

We wash the eggplants and bell peppers. We coat them with one tablespoon of vegetable oil, wrap them in foil and send them to an oven preheated to 200 degrees. We bake them for 30 minutes.

We wash the tomatoes, make small cuts on them and scald them with boiling water. Then cool and carefully remove the skin.

Peel the onion and garlic. Rinse fresh parsley.

Chop all the ingredients: garlic, onion, herbs, tomatoes, peppers. We do the same with eggplants, having previously removed the peel from them.

We continue to grind the products. You can chop with a sharp knife or use household appliances.

Add vinegar, salt, pepper and the remaining oil to the resulting vegetable caviar. Mix and place in a sterilized jar. We close with lids and send for storage. The appetizer should be served cold. Bon Appetit!
