Fried squash caviar in a pan

Do you like squash caviar, but do not want to spend a lot of time and effort on its preparation? Try the recipe for squash roe fried in a pan. The squash caviar prepared in this way is in no way inferior to the original one. On the contrary, in a frying pan, caviar turns out to be even more aromatic and juicy.

Wash and dry the zucchini. If necessary, if the skin is tight, cut it off. Cut zucchini in half, remove seeds if large. Cut the courgettes into cubes.

Heat a frying pan with vegetable oil, put the zucchini on it. Fry until half cooked. Then transfer the zucchini to a saucepan.

Peel the onion, cut into quarters.

Fry the onion in vegetable oil until transparent. Transfer the onion to the zucchini saucepan.

Wash the carrots, peel them. Cut into small half rings. Fry the carrots in vegetable oil until soft. Transfer the carrots to the rest of the ingredients in a saucepan.

Skip the courgettes, onions and carrots through a meat grinder and send back to the pan.

Put a saucepan with zucchini mass over low heat. Cook vegetables for about 40 minutes.

At the end of cooking, add tomato paste, chopped parsley, and salt, pepper and other spices to your liking. Mix everything thoroughly, boil for another 5 minutes.
