Zucchini with minced meat in the oven

These zucchini are perfect for a light but hearty dinner. The combination of meat with vegetables is always tasty and healthy. For the richness of the taste and aroma of the zucchini, generously fill it with Parmesan. It is recommended to serve the dish hot, sprinkled with fresh chopped herbs.

We wash the zucchini, dry it and cut it lengthwise into two halves.

With the help of a tablespoon we take out the seeds and thus form the "boats".

To prepare the filling in a volumetric bowl, mix the minced meat, an egg, a slice of white bread soaked in milk, and salt.

Finely chop the extracted zucchini pulp with a knife and also add to the minced meat.

Chop half of the parsley and mix with the filling.

Stuff the zucchini “boats” with the prepared filling, lightly press the filling with a spoon. Cover the surface with grated Parmesan. We bake the zucchini for about an hour in the oven at 160 degrees. The zucchini should be soft and the crust on top should brown well. Serve hot zucchini, sprinkle with the remaining parsley.
