Zucchini caviar without blender

Juicy, tender caviar, the taste of which is familiar to us from childhood! Although you won't find such caviar on store shelves, it is quite easy to prepare it at home. And it doesn't matter if you don't have a blender, the meat grinder will do the job perfectly! Stewing will make the caviar smooth and soft. Simply delicious!

Wash the zucchini, cut off the peel from them, cut them lengthwise into 2 halves and peel them of seeds.

Peel the onion and cut it into several pieces.

Now we pass all the vegetables through a meat grinder.

We transfer the vegetable puree to a frying pan and simmer over low heat for about an hour until the liquid has completely boiled away. And grind the mass with a crush until smooth.

Then add spices, salt and sugar. And we continue to stew for half an hour.

Pass the garlic through a press. We add it to the caviar in 5 minutes. until ready. We put the ready-made caviar in sterilized jars and roll it up.
