Zucchini caviar without mayonnaise

Zucchini caviar for the winter is prepared without mayonnaise from pre-fried vegetables. Instead of tomatoes, you can add tomato paste to its composition, this will save you cooking time.

Peel the onions and carrots, rinse with water and cut into cubes. Wash the zucchini, if necessary, remove the hard peel and seeds, chop the pulp.

Fry onions in a little sunflower oil until golden brown, then add carrots to it. Fry the courgettes separately.

Transfer all the fried vegetables to a large saucepan or cauldron, put it on low heat, and simmer the vegetables for 15-20 minutes. All ingredients should be soft. Then grind the vegetable mass with a blender until smooth. After that add tomato paste, sugar, salt and pepper, put on fire again and simmer under a lid for 10-12 minutes.

In the last step, add chopped garlic and vinegar to the caviar, stir, simmer for 10 minutes and then remove the pan from heat. Spread hot caviar in dry sterilized jars, seal them with lids. Wrap the jars in a warm blanket and let them cool completely. It is recommended to store caviar in a cool, dark place.
