Zucchini caviar without carrots

There are many options for cooking squash caviar, which differ in both composition and preparation method. We cook this recipe without carrots. Bake the zucchini before chopping. The caviar turns out to be rich, soft in taste and, accordingly, without a sweetish carrot accent. To add a little natural sourness to the zucchini, use tomato paste.

We wash and dry the zucchini. If the fruits are ripe enough, then it is necessary to peel them and remove the seeds. In the case when the zucchini is young, we use them whole. Cut the prepared fruits into circles no more than one centimeter thick.

Lay out the zucchini mugs on a dry baking sheet. We put a baking sheet in an oven preheated to 180 degrees on a medium level. We bake for about twenty minutes. The mugs should be well softened and slightly covered with a dryish crust.

We take the courgettes out of the oven and place them in a wide bowl. Punch the zucchini with an immersion blender until a homogeneous mass is obtained. Peel the onions, cut into small cubes and fry in vegetable oil until a slight blush appears. Add the fried onions to the zucchini mass, also put the tomato paste there. Mix the mass and put it on the stove. Bring the caviar to a boil and simmer at low temperature for twenty minutes. Stir the caviar thoroughly from time to time, lifting the mass from the bottom to the top to avoid burning. At the end of cooking, add salt, granulated sugar, black pepper and pour in the vinegar.

We lay out the hot caviar in clean dry jars and cover with clean dry lids. We put cans on sterilization. For liter cans we stand for twenty minutes, for half-liter cans - fifteen. Roll up sterilized jars with caviar and cool. We remove the seaming in a cool and dark storage location.
