Zucchini caviar with a blender

Very tasty, tender, creamy squash caviar - a favorite snack of many. Previously, caviar was ground through a sieve or minced in a meat grinder, but today you can simplify and speed up the process with a blender. Thanks to the blender, the consistency of the caviar will be as small and smooth as possible.

Prepare all vegetables for caviar. You can take any zucchini, even those that are already very overripe. Keep in mind that young zucchini gives a lot of liquid that will need to be evaporated for a long time.

Peel and rinse the onions and peel the courgettes. Remove the seed system from the courgettes.

Send vegetables to a saucepan and whisk with a hand blender, or mince the vegetables first. Simmer vegetables over low heat until liquid evaporates.

Add tomato paste and salt and pepper to a saucepan, as well as other spices to taste and oil. Leave the pan to simmer for a while, and during this time, sterilize the jars.
