Zucchini caviar is a wonderful low-calorie preparation for the winter, a real find for thrifty housewives. Caviar has a delicate texture and pleasant pungency, which you can also enhance to your taste.

Wash the zucchini, dry it, cut into pieces and pass through a meat grinder.

Transfer the squash mixture to a saucepan, add tomato paste, salt, sugar, pepper and sunflower oil to it. Put the saucepan on the fire, bring the vegetable mass to a boil. Then, reduce heat and cook for another 40 minutes.

Then cool the caviar a little, chop it through a meat grinder until smooth. You can skip this step if you are satisfied with the consistency of the snack.
