Zucchini caviar

Zucchini caviar is an excellent appetizer that consists of a wide variety of vegetables in perfect harmony with each other. Thanks to a small amount of vegetable oil, the caviar is light, and after grinding on a blender, it acquires an airy texture. Spices and tomato paste add a pleasant sweet and sour taste to vegetables, which goes well with meat and vegetable dishes.

We wash young zucchini under running water, remove the stalk. We peel the zucchini from the peel, it is most convenient to do this with a vegetable cutter. If the seeds have already formed in the zucchini, remove them. Cut the zucchini into small cubes.

We clean the carrots, wash and rub on a coarse grater.

Peel the garlic, rinse and chop it into thin slices.

Peel the onion, rinse it and soak it for 3-4 minutes in cold water so that it does not irritate the eyes when slicing. Chop the onion into small cubes.

Put the onions and carrots in a preheated pan with vegetable oil and fry until golden brown.

Add zucchini to the fried onions with carrots, mix and fry until soft.

Then add tomato paste, a mixture of peppers, vinegar, salt and sugar to the vegetables. Mix well, cover the pan with a lid, reduce the heat and leave the vegetables to simmer for 15-20 minutes, remembering to stir occasionally.

Remove the finished vegetables from the heat, open the lid and let them cool slightly. Then put them in a blender bowl and grind until puree.
