Zucchini caviar from childhood

Homemade squash caviar is not at all difficult to cook. The appetizer is served chilled, it can be spread on bread, and also served as a sauce for hot dishes.

Peel the vegetables, rinse and dry.

Cut the courgettes into small cubes, the onion into thin slices. Pass the carrots through a coarse grater.

Put the zucchini in a frying pan preheated with oil.

Fry until half cooked, then add carrots and onions. We continue to fry until transparent.

After that, grind the vegetables in a blender. Return the gruel to the pan and simmer under the lid over low heat for 40 minutes. Stir occasionally.
