Mouth-watering squash caviar can be prepared according to a homemade recipe. It will turn out no worse than from the store! Vegetable preparation is universal in its application: it can be both a sauce and an important component of cold snacks.

We will prepare all the necessary products. We wash and peel the vegetables. Zucchini also from seeds, if necessary.

Cut the courgettes into small cubes.

Pass the carrots through a coarse grater. Chop the onion.

Put vegetables in a heavy-bottomed saucepan and put on fire. Add water to the food, bring to a boil and simmer for 40 minutes.

After the vegetables are cooked, they will release a sufficient amount of liquid. It must be carefully drained.

Now grind the stewed vegetables with a blender. We send the resulting gruel back to the pan. Pour vegetable oil here, add tomato paste, salt and pepper. Stir and simmer over low heat for 30 minutes. 5 minutes before cooking, add vinegar and stir again.

We pour the caviar into clean jars and sterilize in a saucepan with water for about 20 minutes. Then we take it out, close it with lids and send it for storage. Ready!
