Squash caviar in pieces prepared according to this recipe turns out to be especially tasty. The secret to the incredible taste lies in the equal proportions of zucchini and tomato. Sweet and sour tomato flavor perfectly complements the delicate taste of zucchini. The combination of zucchini with the rest of the ingredients allows you to cook divinely delicious caviar.

At the very beginning, you need to prepare all the vegetables. Peel and cut onions into small pieces.

Rinse the tomatoes and cut into small cubes. If desired, the tomatoes can be peeled - for this, slightly cut tomatoes should be dipped in boiling water for a couple of minutes, after which the skin will easily be removed from the pulp.

Peel and grate the carrots. Alternatively, peeled carrots can be cut into cubes with a knife.

Rinse the zucchini and cut into cubes. If the fruits are young, then there is no need to peel them.

All prepared vegetables are placed in a frying pan with high sides or in another suitable container. Add vegetable oil there and simmer vegetables for 15 minutes. After that, season the cooking dish with chopped garlic, ground pepper and salt. Mix everything and continue to cook on low heat for about 30 minutes. A couple of minutes before cooking, add vinegar to the vegetables and mix.

When ready, we immediately spread the squash caviar in pre-sterilized jars, close the lids and completely cool it upside down at room temperature. For storage, we move the workpiece to a cool place.
