Did you know that delicious squash caviar can be cooked in a slow cooker? We clean and cut vegetables, put them in the multicooker bowl, add spices, press the button and that's it! In two hours our caviar is completely ready! Let's get down to cooking!

We wash the zucchini, remove the stalks and peel them. Peel and wash carrots and onions.

Cut the carrots into thin slices, cut the onion in half and cut into thin half rings.

Put the vegetables in the multicooker bowl, sprinkle them with salt and leave for 20-25 minutes so that they let the juice out. After the vegetables are juiced, add vegetable oil, tomato paste and sugar to the vegetables. We turn on the multicooker to the "Quenching" mode, set the cooking time to 120 minutes and close the lid of the multicooker. From time to time, do not forget to open the lid of the multicooker and stir the vegetables. 5-7 minutes before the end of cooking, add red and black pepper to the vegetables, mix and continue to simmer. After the beep, do not open the lid of the multicooker, let the vegetables brew for 5-10 minutes.

We spread the prepared hot caviar in sterilized jars, tighten with boiled lids and leave at room temperature until it cools completely. Then we remove the caviar for storage in the refrigerator.
