Zucchini caviar is not just a great snack that goes perfectly with a large number of dishes, but also a real storehouse of vitamins. And all thanks to the main ingredient - zucchini, which is low in calories and high in phosphorus, copper, iron.

Zucchini must be washed, peeled and seeds removed. After that, cut the zucchini into small cubes.

We peel carrots and onions. Then we also cut everything into small cubes. Then we send the chopped vegetables to the pan and, adding a small amount of water there, send them to the fire and simmer for forty minutes.

Next, we rinse the tomatoes, then fill them with boiling water. We leave for ten minutes. Then let the tomatoes go into cold water for a few minutes. After that, we make a cruciform incision on each fruit and remove the skin. Grind the peeled tomatoes with a blender or meat grinder until puree. Grind the stewed vegetables until puree. After that, combine the chopped vegetables and tomatoes in one saucepan.

We send the pan with vegetable puree, adding spices there, over low heat for half an hour. During the cooking process, do not forget to constantly stir the contents of the pan so that it does not burn. In half an hour, the squash caviar will be ready. It remains to lay out our workpiece in sterilized jars and roll up the lids.
