Zucchini caviar for the winter with tomatoes

Very tasty and aromatic caviar can be prepared from just three vegetables. Such a zucchini appetizer is good for a side dish, and in the form of a sauce for fish and meat dishes, and for kebabs.

Wash the zucchini and cut off the skin. Remove the core with seeds and coarsely grind on a grater. Season with salt, stir with your hands and leave for 15 minutes.

Squeeze the zucchini halfway with your hands.

Transfer the squeezed pulp to a saucepan and place over low heat. Simmer it a little until it softens for about 7 minutes.

Rinse the peeled onions, chop finely and fry in a preheated pan with oil for 3 minutes.

Put the tomatoes in boiling water for a minute and peel them. Cut the tomatoes into small slices and place them in a saucepan in which you will cook the workpiece. Boil the tomatoes and cook for 10 minutes until the tomatoes are tender.

Put the zucchini and onion in the tomato mass, mix, and when the mass boils, simmer the workpiece over low heat for 35 minutes.

Pour spices, sugar and salt into the caviar and cook for another 10 minutes. Grind the mass with an immersion blender to the desired consistency. Add the vinegar, stir well and place the caviar in sterile jars. Cork, turn over and wrap the container with a blanket for 10 hours.
