For me, preparing any blanks for the winter is my favorite thing. Zucchini caviar with mayonnaise without tomato paste was no exception. I love squash caviar and use several of my favorite recipes. Such squash caviar often helps out when you need a quick snack.

Wash the zucchini and carrots, pat dry and peel them with a vegetable peeler. Use a tablespoon to remove the seeds from the peeled zucchini. Cut the vegetables into medium cubes. Peel the onions and cut into cubes. Heat the pan well and pour in vegetable oil, fry the onions, and then add the rest of the vegetables.

Cook over medium heat for about 45 minutes. Meanwhile, wash the tomatoes, dry them, remove the stalk and cut into small cubes. Remove the skin if desired. After 15 minutes, add to the rest of the vegetables and add black ground pepper, mix thoroughly and continue cooking. Remove from heat after the time has passed.

Peel the garlic and rinse, then pass through a press, you can also use a fine grater. Place the minced garlic in a bowl with the squash. Using a hand blender, grind the vegetables to a smooth, uniform consistency. Add the required amount of granulated sugar and table salt. Stir.

Place the container with the contents over medium heat and bring to a boil. Add mayonnaise. Then reduce the heat and cook the squash caviar for about 40 minutes, stirring occasionally. 10 minutes before cooking, pour in the vinegar and stir. Wash and sterilize jars in the oven or microwave. Pour boiling water over the lids or boil in a saucepan.

Gently spread the hot squash caviar in sterile jars and tighten with sterile lids. Turn the caviar cans upside down. Leave as it is until it cools completely, wrapped in a warm blanket. Then turn the cooled jars of squash caviar over and transfer to a cool, dark place for long-term storage.
