Prepare all the ingredients necessary for making squash caviar. Wash the zucchini, dry on a kitchen towel. Remove the stalk from each zucchini, and, if desired, also remove the peel. Cut the zucchini into large pieces, mince them. Peel the onion, cut it in half and also mince it.

Pour onions and zucchini into a large saucepan, add ketchup, mayonnaise, vegetable oil to them. Mix everything thoroughly. Put the saucepan on low heat, cover it and simmer for 45 minutes, stirring occasionally.
