Cooking zucchini caviar with tomato paste is justified by the fact that tomato paste does not thin the consistency of the snack, unlike chopped tomatoes. Mayonnaise gives the caviar a light creamy flavor.

Wash the vegetables, weigh the required amount.

Peel the zucchini, remove seeds and pulp. Cut into small pieces.

Dice the onion, add to the courgettes and chop everything in a blender.

Transfer the vegetable mass to a saucepan with a thick bottom, set on fire and cook for half an hour. Put tomato paste, mayonnaise into the vegetable mass, add salt and granulated sugar. Stir and cook over low heat after boiling for another half hour, stirring.
