Zucchini caviar with mayonnaise and fried onions

Cooking snacks and preserves with the addition of mayonnaise is becoming more and more popular. This sauce will give the squash caviar a special tenderness and will be a good preservative; moreover, you do not need to add vinegar to the preparation. Mayonnaise can be taken either ready-made or prepared by hand. Fried onions will give the caviar a special taste. Grind vegetables for this caviar in a meat grinder

Wash and peel the zucchini from the skin and seeds. Peel the bulbs. Measure out the rest of the ingredients in the amount indicated in the recipe.

Cut the peeled zucchini into small cubes.

Then twist them into a meat grinder with a large wire rack. Transfer the resulting zucchini mass to a dish special for stewing. Pour vegetable oil over the zucchini and put them on low heat. Simmer the zucchini in oil for 1-1.5 hours, stirring occasionally.

Cut the peeled onions into pieces and twist in a meat grinder. Then fry the twisted onion until transparent in a separate skillet.

In a separate bowl, combine mayonnaise, tomato paste, salt, sugar and black pepper. This will be a dressing for squash caviar.

Put the fried onion and the prepared dressing into a saucepan with zucchini, mix well and simmer the caviar over low heat for another 1 hour. If desired, grind the prepared caviar with a blender or grind on a sieve and then simmer for another 10 minutes.
