Zucchini caviar with mayonnaise you will lick your fingers for the winter

Delicious and tender squash caviar with the addition of mayonnaise is an ideal cold snack. Add a slice of fresh crispy bread to it and a quick snack is ready! Garlic and ground pepper give the caviar spicy notes, and tomato paste - a pleasant sourness and beautiful color.

We wash the zucchini under running water, remove the stalks and peel the zucchini. Then we cut them into cubes of any size. Clean and rinse the garlic cloves.

Grind the zucchini with a blender along with the garlic. Then put the zucchini puree in a saucepan with a thick bottom, add mayonnaise, tomato paste, pepper, sugar and salt. Mix all the ingredients well and put the saucepan with caviar over medium heat. Bring the mass to a boil, reduce the heat to minimum and simmer the caviar for 2-2.5 hours.

20 minutes before the end of cooking, add vegetable oil and vinegar to the caviar, mix well. When ready, remove the caviar from the heat.

We spread the prepared hot caviar in sterilized jars and tighten the lids tightly. We leave some caviar for tasting. We turn the jars of caviar upside down and leave to cool completely at room temperature, after which we store in a cool dark place.
