Zucchini caviar with tomatoes is a tasty and simple dish, which is easy to cook at home. Caviar can be cubed, or it can be chopped using a meat grinder or blender. This recipe describes cooking squash caviar in cubes in a skillet using tomatoes.

Carrots must be peeled, washed and diced.

Heat the pan, pour a small amount of vegetable oil into it. Next, we send the carrots there to fry until a slight blush.

Peel and cut the onions into small cubes.

Pour chopped onions into the pan to the carrots.

We wash the bell peppers, peel them of seeds and cut them into small pieces.

We send the peppers to the pan for the cooking vegetables.

Remove the skin from the zucchini, cut the fruits into cubes. If there are large seeds, they should be removed.

Pour the chopped zucchini to the rest of the vegetables. We simmer everything together for 15 minutes under a closed lid.

Rinse the tomatoes, cut them into small cubes and add them to the pan.

After 10 minutes, add the garlic to the rest of the ingredients. Mix everything. Season the cooking dish with salt and spices (you can use curry, ground pepper, Provencal herbs - be guided by your own taste). Simmer the squash caviar for another 5 minutes and turn off the gas.
