Zucchini caviar with tomatoes spicy for the winter

Once I found my grandmother's recipe for spicy squash caviar with tomatoes in my cookbook and decided to cook it. Spicy caviar came to the taste of my homemade ones, and now in the fall, during the harvesting period, I always use this recipe.

Prepare the required ingredients for the spicy squash caviar. Wash the squash thoroughly and peel it with a vegetable peeler. Cut the zucchini peeled from the skin lengthwise. Using a tablespoon, remove the seed core. Grind the prepared zucchini until smooth using a blender or meat grinder.

Peel the onions and rinse under running water. Chop the peeled onions until smooth using a blender or meat grinder.

Wash the carrots thoroughly and peel them with a vegetable peeler. Chop the peeled carrots in the same way as the rest of the vegetables.

Wash the hot pepper well, dry it and peel it from the core and seeds. Grind hot peppers in a way convenient for you. Wash the tomatoes thoroughly, cut into several pieces and remove the stalk, then chop until smooth.

In a container with a thick bottom, in which you will cook zucchini caviar, combine all chopped vegetables except hot pepper. Add the required amount of granulated sugar and table salt, pour in vegetable oil. Place over medium heat and bring to a boil. Then reduce the heat and cook the squash for about 2 hours, stirring occasionally.

Then add chopped hot peppers and cook the squash for another 2 hours. Wash and sterilize the jars in the oven or microwave. Pour boiling water over the lids or boil in a saucepan. Gently spread the hot squash caviar in sterile jars and tighten with sterile lids.

Turn the jars of caviar upside down, leave to cool completely, wrapped in a warm blanket. Then transfer to a cool, dark place for storage. Serve the prepared spicy squash caviar.
