Zucchini caviar with tomato paste

This preparation can be appreciated by children, especially if they do not eat zucchini in a different form. After all, caviar is a homogeneous appetizer, it has the consistency of mashed potatoes. And adults love to spread it on white bread, they get a kind of sandwiches.

Wash the zucchini, remove the middle with seeds. Cut the vegetables into pieces so that they fit into the hole of the meat grinder.

Peel and wash the carrots. Also cut into medium slices.

Peel the onions and cut into quarters.

Wash the parsley, shake off excess moisture from it and lay out to dry on paper towels.

Chop all vegetables by passing them through a meat grinder.

Put the resulting puree in a saucepan.

Add tomato paste and any seasonings you like. Also add black pepper. Mix everything and send to simmer on a low-medium heat. After boiling, reduce heat to low and cook, stirring occasionally, for about 1 hour until liquid evaporates.

At the end of cooking, add salt and grind again, only with an immersion blender.

While the caviar is being prepared, wash the jars and lids with soda, sterilize the jars, boil the lids. When the caviar is ready, put it in the jars, tighten them with lids. Turn the blanks upside down and cool under a warm blanket to room temperature.
