You always want to prepare large quantities of vegetables for the winter, and make the cooking process simple and effortless. I want to share with you a simple recipe for squash caviar with tomato paste, which will not take much of your time and the result will be delicious.

Prepare all the ingredients you need for a delicious snack.

The first step is to prepare the jars, wash them thoroughly and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes. I sterilize jars and lids in an oven at 100 degrees.

Wash the squash thoroughly, dry it and peel it with a vegetable peeler. Using a tablespoon, remove the seed core. Cut the peeled zucchini into half rings. Line a baking sheet with baking paper and place the prepared zucchini. Place in a preheated oven for 30 minutes at 200 degrees.

After about 20 minutes, gently open the oven and turn the courgettes over to the other side. Close the oven and cook for another 10 minutes.

Place the baked zucchini in a metal container with a thick bottom and cover.

If all the zucchini does not fit into the oven, bake the second batch in the same way, and then add to the container with the rest of the zucchini.

Wash the carrots, peel and grate on a coarse grater. Peel the onions, cut into medium cubes. Put a deep frying pan on fire and heat well, pour in the required amount of vegetable oil. Arrange the onions and carrots. Cook covered until soft, add tomato paste, table salt and granulated sugar.

When the zucchini is cool, drain the liquid from them.

Add the fried vegetables to the zucchini container. Place over medium heat and bring to a boil, stirring occasionally. Then reduce the heat and cook the squash for about 10-15 minutes. Add black pepper to taste and mix thoroughly.

Rinse your favorite greens thoroughly, shake off excess moisture and chop it with a sharp knife. Add to squash caviar.

Remove the squash roe from the heat and chop until smooth using a hand blender.

Gently spread the hot squash caviar in sterile jars and tighten with sterile lids. Place the jars of zucchini caviar in the oven for 10 minutes at 100 degrees. Then unplug the oven and let the caviar jars sit for another 30 minutes.
