Zucchini caviar with apple cider vinegar is an option for preparing your favorite snack that goes perfectly with many dishes. To make our caviar as tender as possible, when choosing ingredients, give preference to middle-aged zucchini, since it is in young fruits that a large amount of juice is contained, which may not in the best way affect the quality of caviar.

First of all, we wash the zucchini, remove the peel from it and remove the seeds and cut into arbitrary pieces. Peel the onion, then cut each fruit in half.

The next step is to chop the zucchini and onions until they are puree. This can be done with a meat grinder or blender. We send chopped vegetables into a saucepan, pour in vegetable oil there. Cook the contents of the saucepan over low heat for an hour after boiling. During the cooking process, the vegetable mass must be constantly stirred so that it does not burn. An hour later, add tomato paste, pepper, apple cider vinegar, bay leaf, sugar and salt to the vegetable mass. Then we cook everything for an hour.
